To learn how to make mama’s candyThe first thing we have to do is remove the peel from the fruits and cut it in half; Afterwards, you will have to cut it into wedges or slices to be able to make mamón’s candy.

Next, we wash the suckers and place them in a pot with water; we have to let it boil for at least 5 minutes. When we remove it from the heat, we must introduce the boiled fruit in a container with water and add the envelope of baking soda; we should let it rest for 1 hour.
With the bicarbonate we achieve that the sucker sweet have a sweeter aroma, in addition to helping the fruit to harden a bit on the outside and not be so soft.

Once this hour has elapsed, in order to continue with our recipe for dulce de mamón We will have to rinse this fruit from the bicarbonate and add it, again, to a pot with a little water: it should only cover half of the sucker. Next, we must add the sugar and let it simmer until the mixture begins to clear.
It is important that, while doing this process, you do not remove the fruit since the idiot it is very soft and may end up breaking.

You should let the mixture with the sugar boil for 2 hours over low heat but if you notice that the water evaporates, you will have to add boiled water again.
