The first step in crafting this homemade broth is to season all the meat and bones that you are going to use. Once this is done, place a pot on the fire with plenty of water and put in it meat and bones. Make sure the ingredients are completely covered by water, and set the heat to medium-high to bring it to a boil.

While it is cooking, take the opportunity to wash and peel all vegetables and greenss (carrots, leek, onion and parsley) and, once ready, add them to the pot next to the meat when the water has started to boil. Now, add a pinch of salt, lower the heat a little, cover the pot and let the meat broth cook for at least 1 hour and a half or 2 hours.

It is important that you bear in mind that during the first minutes of cooking, the ingredients will release a kind of white foam that will rise to the surface and that you can remove with the help of a slotted spoon. Thus, you will reduce the fat in the broth and it will be much smoother.

When the cooking is finished, you just have to add salt and remove the meat, bones and vegetables. Next, strain the broth obtained by pouring it into another pot and voila!

If you want prepare a rich soup with the meat broth, pour it back into a pot, place it on the fire and when it boils, add the pasta that you like the most, be it noodles, galets, shells, etc., and wait for it to soften and acquire the exact point.
