Very good forum on kefir. I have been handling water kefir for several years and I have noticed that even if you take good care of it, it always loses properties and finally the seed dies. I have read that being composed of multiple beneficial bacteria, they are decimated by the glucose that is added and so on until it is extinct and only a blaquesine cream begins to form and that indicates that it is no longer in good condition.
To better preserve the seeds, use panela or cane honey. Do not use white or refined sugar, it is deadly. The panela or cane rapadura is the one that best maintains the seed in the long term. Hello Gloria, the color, the smell or the shape can help you to know if it is bad. As we discussed in the article: all those granules that acquire a tone other than white: yellow, brown, pink, etc. Together with those that are not elastic, they must be removed from the rest of the nodules that make up your kefized milk. If all the nodules have changed their color, it will be a sign that the kefir has been spoiled and is not suitable for consumption. Greetings
