How to make rice vinegar

Here’s how to make rice vinegar step by step. You will need to:

  • 4 cups of white rice
  • A quarter ball of Chinese yeast
  • White sugar
  • Eggs

You will also need a mixing bowl, a double boiler, a couple of measuring cups, 2 glass containers, and a clean cloth. Follow these instructions:

  1. Place the rice in a large bowl and cover it with water. Let it soak for about 4 hours and cover the bowl with a cloth.
  2. Then strain this rice mixture and keep the rice water in the bowl.
  3. Put the bowl in the fridge and leave it there overnight.
  4. After this time, you will have to measure the rice water that was previously prepared. For every cup of rice water you use, add ¾ cup of white sugar.
  5. Mix the sugar and water until all the granules are completely dissolved.
  6. The next step will be to cook the sugar and rice water mixture in a kettle for about 20 minutes.
  7. Let the mixture cool for a while and put it in a clean glass container.
  8. Next, add the yeast. Keep in mind that for every 4 cups of water and rice you will have to add approximately a quarter of a tablespoon of yeast.
  9. Mix all ingredients well.
  10. To ferment the product, you will have to be patient and wait for 5-7 days.

  12. Re-ferment the mixture for about 4 more weeks (the duration of the second fermentation will vary according to your taste).
  13. After this time, use a clean cloth to strain the mixture and return it to a boil in the double boiler. If the mixture is cloudy and you want it to clear, add 2 egg whites for every 40 cups of the mixture before reheating.
