Juice is the liquid that is extracted from squeezing fruits, herbs and other vegetables, while juice is the liquid that is obtained by pressure, cooking or distillation of both vegetables and animals. So if you cook a piece of meat, the resulting liquid, which remains as a sauce, is the juice and not the juice. But for a vegetable, if you squeeze it, press it or infuse it at the end, it is the same to say juice as juice, since it is the liquid extracted from the vegetable and it will have the same properties if you extract it in one way or another.
