How to make tomato sauce for preserves

Natalie

Hello! I would like to know how to close the jars? And how long do the preserves last?
Do they close upside down?
Thanks!

Maria mercedes

Hello! I do it as follows: You select glass jars that have a metal lid, wash the jars very well with soap and water, then boil water and pour it into the jars (to sterilize them), place what you want to keep and tap gently the jars from the bottom so that any excess air comes out, put the lid on without closing it completely and pour the jars into a pot with water up to approximately 2cm below the thread of the lid and cook for approximately 10 minutes, then lower from the fire, let it cool and close the lid with greater pressure, this generates a vacuum in the jar, after opening if you must consume quickly, as long as you do not open them they can last up to two months if they are kept refrigerated

Hello: I live in a town next to Caceres, the land is very clayey and when it dries it becomes like a stone, I try to add a lot of manure so that it is more spongy, and water a lot so that when it dries it does not connect to the bush. They recommended to me to throw sand so that this more luck. It is a land that has to be wet otherwise it tightens and becomes clods like stones.
My question; I want advice on the kind of tomatoes that are best for this land as well as fertilizers etc. The other question, I also like to plant potatoes, also kind of soil and potatoes. All this is very laborious with this kind of soil. Tell me how I could improve the soil, or what kind of soil, is needed to grow both tomatoes and potatoes. Many thanks
