Combine lime juice fish sauce sugar chillies and garlic in a medium bowl. Stir the sugar to dissolve. Deposit back. Place the lettuce on a serving dish. Move seafood to dressing pot, and add shallots. Toss to coat then add cilantro and mint scallions. Toss again then scoop with a slotted spoon over lettuce. Cover and cook for seven minutes, or until shells open. Dismantle any unopened moulds. Serve over pasta and apply parsley to garnish. Ingredients: Olive oil 2 shallots finely chopped 2 finely chopped garlic cloves 3 1?2 ounces kale chopped 2 pounds of moulds washed and overshadowed 1 small bunch of fresh parsley finely chopped Bread Directions: heat the oil in a deep saucepan. Add the garlic and shallots and mix for 5 to 6 minutes over low heat. Attach the stirring kale and cook for 1 to 2 minutes. Add the cider and heat up to a simmer. Attach the mussels to the pan to bring to a boil cover and periodically cook the shaking pan until the musk has opened for about 3 to 4 minutes. Discard all non-opening moulds. Remove the mussels with parsley and stir to combine. Serve the mussels with bread in bowls to mop up juices.
