The first step in making prune jam for preserving is wash the plums. To do this, use plenty of water and rub all the fruit with your fingers. Once washed, open them in half to remove the bones and cut them into pieces small without peeling them. It is advisable that the pieces are not large. The smaller the ones, the better the sugar will absorb and the faster they will cook.

Place the chopped plums in the pot that you will use to make the jam. It is best to use a large pot so that the plums are not all clumped together and the jam cooks better. Add the sugar and lemon juice spreading them all over the fruits. Mix well to impregnate each piece of plum with the sugar and lemon.

When you have stirred it well, cover the pot and leave it stand in the fridge for about two hours. In this way, the prunes will begin to absorb the sugar and release their juice.

After time, remove the pot from the refrigerator and put it on to warm over medium heat. You should stir the plum jam from time to time so that they do not stick to the bottom and burn. In order for the plum jam to keep for a longer time, you must make a vacuum packed. To do this, place a clean cloth in the base of a pot, put the covered jars on top (stand upright), cover them with water and heat them over medium heat. Now that you know how to jam plums, keep in mind that homemade jams don’t last as long as industrial ones. Once the jar is open you should consume it within three weeks and store it in the refrigerator.
